Mushroom Stock

INGREDIENTS
5 cups water
1 cup dried porcini mushrooms (about 1oz)
1/2 cup chopped celery
1/3 cup dry red wine
1/4 cup dried lentils
2 fresh thyme sprigs
1 fresh sage sprig
1 whole garlic head halved
DIRECTIONS
Combine all ingredients in a large saucepan; bring to a boil. Reduce heat, and simmer until reduced to 2 cups (about 40 minutes). Strain stock through a sieve into a bowl; discard solids.
