Classic Vinaigrette

INGREDIENTS
1 TBSP finely chopped shallot
1/2 tsp Dijon mustard
pinch of sugar
pinch of salt
freshly ground black pepper
1 tsp cold water
2 TBSP white-wine vinegar
6 TBSP extra-virgin olive oil
DIRECTIONS
Put ingredients in a wooden salad bowl. Whisk together. Then, whisk in white-wine vinegar. Start to drizzle in olive oil, whisking until a thick emulsion forms.
